Big Texas Shindig.
Happy Birthday to my Mamma!!!!!!
Well this week has been crazy!
We went to the Big Texas Shindig that No Greater Joy put on, we left on Thursday and came back on Sunday. We had SO MUCH FUN! B,y Saturday evening my stomach muscles were sore from laughing so much! I met so many people, and made so many friendships. I met Sharon on Friday, She works for Shoshanna in her bulk Herb store, I didn't want to keep her from work, so I ended up helping out with the bulk herbs store booth they had there. I LOVED it! It was so fun, I got to meet people, and I was able to learn about the herbs.
We also played a HUGE game of I never, or I have, have you. We laughed and laughed, the only thing that I would have changed about this weekend, would be to make it longer. It seemed like we were just starting to get to know people, then we had to leave. I cant wait to go again next year!
I wish I could write more, but we are still SUPER crazy and I have to go. Laundry mountain calls my name, I must embark on the hazardous journey to conquer its peaks.

Dippity Doo Da
Tonight was chip dip night at our house. I have been doing the meal planning lately and really wanted to try both of these recipes. I thought it would be fun, and not to mention tasty, to have a dip night.
Thew first dip that we had was a green sauce, like the one at Gringo's or Casa Ole. It was SO good. your really have to make this, no questions!
Green Sauce
1/2 bunch Cilantro (Fresh)
1/4 Onion
2 clove garlic
1/2 cup Salsa Verde
3 small avocados
1/2 juice of a lime lemon
16 oz. Sour Cream
Put Cilantro, Onion, Garlic, and Salsa in blender and blend.
Then add Avocado, lime or lemon, and salt then blend,
Add sour cream and blend once more. Then enjoy! It will keep for several days in the fridge.
Oh its so good!
The other dip that I made is this "Texas trash" bean dip. This was a wonderful dip! it was flavorful and creamy, I might put more cheese on it the next time i make it. and there WILL be a next time. it is so yummy!
8 ounces cream cheese, softened
1 cup sour cream
2 cans (16 oz.) refried beans
1 packet taco seasonings
2 cup cheddar cheese (shredded)
2 cups Monterrey Jack cheese (shredded)
Preheat oven to 350 degrees. Mix together cream cheese and sour cream in a large bowl. Mix in refried beans and stir until well combined. I added taco meat, Daddy likes his meat, but that is optional.
Spray 9x13 pan with cooking spray. Spread the mixture evenly into the bottom of the pan. Sprinkle the top with the both cheeses.
Bake for 25-30 minutes, or until cheese is melted and slightly browned. Serve with tortilla chips.
I hope that y'all enjoy these. If you do try one or both, let me know what ya'll think. According to tonight's results. we might just have to do dip night again soon.

Musical Monday
I took a break from blogging last week. We had such a busy week that I didn't have any time to write.
This week we were made very grateful to have a sink and running water. Our sink was clogged and so we had to haul our dishes upstairs, wash them in the bathtub, dry them, and then bring them back down to put them away. The plumber came out to diagnose the problem, and then should be out tomorrow to fix it.
We did piano today and I am very excited because now we actually have a valid excuse to go to the music store. The kids need some things, so we get to go pick it up. I LOVE the music store. I always feel like a little kid at Christmas. I would buy out the whole store if I could.
I LOVE this Hymn. We sing it in church from time to time and I always get the goosebumps. I would like to get the book when we go to the music store. They have written so many great songs.
By faith we see the hand of God
